After two transit providers, considering three or more should be driven
by something specific you're trying to solve, e.g., latency reduction,
balance to cut cost, presence in a region they cover, e.t.c. I would
caution against adding transit providers for its own sake.

If your needs are not complex, two is more than enough.

Check whether your providers support BGP communities that can tell them
what to do with your traffic. As it's all on-net for them, you can steer
traffic toward whichever link you want even though your physical
interconnects are geographically dispersed, without too much trickery on
your part.
